Rooted in purpose
Luzerner Kantonsspital (LUKS) is an academic teaching and research hospital located in Central Switzerland, offering a wide range of diagnostic and therapeutic services. A unification of regional facilities in 2008, made LUKS the largest hospital in Central Switzerland.
At the heart of LUKS’s approach is a clear and powerful mission: to serve patients, employees, and society with responsibility, warmth, and respect. Every aspect of care—including nutrition—reflects this commitment. LUKS operates with scientific rigor, economic efficiency, and a strong belief in teamwork and innovation. With more than 7,000 employees across diverse roles, LUKS ensures the highest level of service for its patients while continuously strengthening the skills of its workforce.
As a regional healthcare leader, LUKS is committed to being both accessible and future-focused, investing in its people and infrastructure to provide care that meets the needs of tomorrow.
This culture of care, professionalism, and progress sets the stage for bold investments in areas like culinary education—where patient well-being and employee development intersect.

A new recipe for learning
To meet the high standards of Swiss gastronomy while nurturing a new generation of culinary talent, LUKS partnered with Global Swiss Learning to roll out a flexible, forward-thinking culinary education program. Designed with the rigorous expectations of the Swiss Federal VET Diploma (EFZ) in mind, the program equips aspiring chefs with techniques, confidence and creativity.
This isn’t just about training—it’s about transformation. The program supports culinary staff at every stage of their professional journey, turning daily kitchen routines into opportunities for growth.
As Stadelman Martin, Head Chef of the Main Kitchen at LUKS, shared about an employee enrolled in the course:
“Tenzing works regularly on the GSL learning platform. It’s great to track his progress and identify where he needs support. We’re both very satisfied—he’s using the platform well.”
Why it matters
In a healthcare environment, food plays a powerful role. Beyond nourishment, meals can bring comfort, joy, and even aid in recovery. By investing in culinary education, LUKS isn’t just developing talent—it’s enhancing the overall patient experience. More than that, it reflects a broader organizational philosophy: quality, innovation, and professional development aren’t optional extras. They’re built into everything LUKS does—including what’s served on the plate. Behind the scenes, hospital kitchens like LUKS prepare hundreds of meals daily—not just for patients, but also for staff and visitors. In such a high-volume, high-stakes environment, efficiency and skill matter more than ever.

A growing movement
LUKS isn’t alone in embracing this innovative model. Today, three major hospitals in Switzerland—Luzerner Kantonsspital, Universitätspital Basel, and Kantonsspital St. Gallen—are using Global Swiss Learning’s culinary courses. This expanding network of forward-thinking institutions is a testament to the power of high-quality, tech-enabled education in driving professional growth and operational excellence.
With Global Swiss Learning’s solutions, LUKS has reimagined what culinary education in a hospital setting can be. The result? A thriving, skilled kitchen team ready to serve up not just meals, but moments of care, dignity, and delight—one plate at a time.
